This book is an attempt to furnish the scientific insight about the role of Abizzia bark in the alcoholic fermentation of rice. This study was undertaken in Manipur where Albizzia bark is popularly used for fermentation by different indigenous groups. Use of Albizzia bark in the fermentation was believed to enhance the product as well as the quality of the product. The exact role of the bark in fermentation were not known. This study investigates biochemical compound of the ingredients, characterized the micro-organisms and their application in the fermentation and finally standardization of the alcoholic fermentation process. The findings may provide useful information for students, researchers and even various interest groups who wanted to explore further.
